Tomorrow’s Christmas Eve so we’re wrapping up this 12 Drinks of Christmas series with a festive champagne cocktail! I can’t help but love champagne because it’s just as good with a casual late-morning brunch as it is for a glitzy midnight toast. I suspect there’ll be rather a lot of champagne flowing this week so here’s a fun new way to jazz it up.

Moscow Mules are my very favorite and this is a more upscale twist on the traditional recipe. Muddling fresh ginger with lime juice creates that classic mule flavor and bright, fruity pomegranate juice adds some extra pep. Top off with champagne to create a beautiful sparkling drink for any celebration!

My family has spent Christmas day at home ever since I was little. We’d travel before Christmas Eve, or for New Year’s, but we always kept that one day quiet and stress-free. While the weeks & days leading up might be demanding, it’s so comforting to know that on Christmas we’ll be home together with no timeline to get on the road or change out of our robes or really do anything that doesn’t feel just right in that moment.

Kirk & I are continuing this childhood tradition and it’s the most wonderfully peaceful way to unwind after a hectic year. Just our little family, enjoying our own home and our own tree with our sweet puppy, building memories and traditions for the future. We have such big plans for our little cabin that I know future Christmases will look very different in many ways, and I can’t wait to look back to this year when it all began.

I’ve included instructions for whipping up a big pitcher that’ll be perfect for your New Year’s Eve party! You can muddle the ginger ahead of time so it’s completely ready to pour just before midnight. If you’re hosting a family-friendly party, this is just as wonderful with sparkling apple cider for the little ones. They’ll feel so grown-up drinking the ‘same thing’ as the adults!

Our presents are wrapped, a breakfast pie is waiting in the fridge, and I’m going to stay right here wrapped up in a cozy blanket for the rest of the weekend thanks to all this gorgeous snow! I hope you all have a wonderful Christmas filled with love.

Ingredients

For One Drink

  • 1 oz. pomegranate juice
  • 1/2 oz. lime juice
  • 3 slices fresh ginger peeled & thinly sliced
  • 4 oz. champagne
  • pomegranate arils for garnish
  • lime wedge for garnish

For a Pitcher

  • 3/4 cup pomegranate juice
  • 3 oz. lime juice
  • 3 inches fresh ginger peeled & thinly sliced
  • 1 L. champagne
  • pomegranate arils for garnish
  • lime wedges for garnish

Instructions

For One Drink

  • Muddle pomegranate juice, lime juice, and fresh ginger slices in a cocktail shaker for several minutes, until ginger has released most of its juices.
  • Add ice and shake for 30 seconds.
  • Strain into a champagne glass. Top with champagne and garnish with pomegranate arils & a lime wedge.

For a Pitcher

  • Muddle pomegranate juice, lime juice, and fresh ginger slices in a cocktail shaker for several minutes, until ginger has released most of its juices.
  • Add ice and shake for 1 minute.
  • Divide equally into 6 champagne glasses. Top each with champagne and garnish with pomegranate arils & lime wedges.
