We’ve been running from one holiday party to another this past week, so anything I can toss together in five minutes is a win at the moment. Even better, I think I’ll shake one up tonight and just enjoy it at home, admiring our tree. Having our own tree in our own home feels so special, even if our puppy still doesn’t understand how a tree got inside the house.
I’m dreaming of a white Christmas… or any snow at all, right now, please. We’re about to break the record for longest streak without snowfall and not one of the ski mountains are fully opened.
I’m loving the photos from friends in the South who are getting snow for the first time, but once you’ve had your fill please send all your snowy thoughts to Colorado!
For a larger pitcher, you could also steep the mint leaves in simple syrup overnight rather than muddle the leaves in smaller batches. This keeps well in the fridge so you could make it a couple days ahead of time, or keep a pitcher ready. The layers will settle but just give it a good shake and you’re ready to go.
This has my vote for most refreshing winter cocktail, so we’ll be making it often until the freezing temperatures sweep in again – sooner rather than later!

Merry & Bright Cocktail
Ingredients
For One Drink
- 1 oz. simple syrup
- 2-3 mint leaves
- 2 oz. white rum
- 1 oz. coconut cream
- sprigs of mint for garnish
- pomegranate arils for garnish
For a Pitcher
- 1 cup simple syrup
- 1 large bunch mint leaves
- 2 cups white rum
- 1 cup coconut cream
- sprigs of mint for garnish
- pomegranate arils for garnish
Instructions
For One Drink
- Muddle simple syrup with mint leaves in a cocktail shaker.
- Add white rum, coconut cream, and ice. Shake well.
- Strain into a glass with ice. Garnish with pomegranate arils and a sprig of mint.
For a Pitcher
- Muddle simple syrup with mint leaves in a large pitcher.
- Add white rum, coconut cream, and ice. Whisk well until completely combined.
- Pour into a fine mesh strainer set over a large bowl to remove mint leaves. Rinse the pitcher, then pour bowl back into the pitcher for serving.
- Serve over ice. Garnish each glass with pomegranate arils and a sprig of mint.
