Chicken Cranberry Apple Salad with Lemon Poppyseed Dressing

I’ve hit the mid-January superfood slump. My rah-rah enthusiasm for kale has been almost completely replaced with dreams of gooey cheese dips. (Queso fundido, I’m seriously looking at you.)

When I get in these moods I have to switch up my lunches so I don’t cave.  I love crisp, tart fruits so this salad doubles down by pairing fresh cranberries with green apples. Chicken packs in protein and staying power, which is a must-have for lunch. And you can toss everything together in the same time it takes to order a pizza, so no excuses either.

The best part of this salad is its crunchiness! Romaine, apple, and cranberries all deliver the perfect bite. If raw cranberries are just too tart for you, try subbing half for dried. Dry cranberries pack lots of sugar, but they’ll help cut the rest of the tart ingredients.

Promise me you won’t skip the homemade lemon poppyseed dressing, because dressing is as easy as shaking a few ingredients together. Way healthier, way more delicious, way fewer half-full bottles cluttering up your fridge.

In case you were wondering… yes, that is sous-vide chicken and yes, it is crazy-good. Rubbed with a little salt and a lotta harissa gives it a level of tender juiciness that I’ve literally never had in chicken before. Everything sous vide coming your way soon!

Chicken Cranberry Apple Salad with Lemon Poppyseed Dressing

Ingredients

Chicken Cranberry Apple Salad

  • 2 cups romaine lettuce shredded
  • 3 oz. cooked chicken diced
  • 1/2 green apple diced
  • 1/4 cup fresh cranberries

Lemon Poppyseed Dressing

  • 1 T. lemon juice
  • 1 t. olive oil
  • 1 t. honey
  • 1 t. dijon mustard
  • 1/4 t. poppy seeds
  • pinch salt

Instructions

  • Shake all dressing ingredients together in a small container.
  • Layer romaine, chicken, green apple, and fresh cranberries in a large bowl.
  • Drizzle dressing over salad and dig in!
