This is really similar to a certain freaky-fast chain’s vegetarian sub, which I inexplicably love. It might be 97% the bread… crisp-soft-perfect Italian bread is my ultimate weakness. Unfortunately, it’s also pretty much totally devoid of nutrition. Taking all the delicious insides and stuffing them between multigrain slices is a worthwhile tradeoff.
We’re staving off that mid-January slump with big mugs of mushroom miso soup and these sandwiches. (Throwback to that miso ‘recipe’ because two pantry ingredients give you basically instant delicious soup, which I am all about right now.)
Here in the foothills we’re getting beautiful light snow showers every afternoon and I absolutely love it. I’m curled up on the couch under a fuzzy electric blanket, with my own puppy plus a sweet foster dog at my feet, craving steaming creamy hot chocolate. This is everything I want from winter. ❤
Ultimate Veggie Sandwich
Ingredients
- 2 slices multigrain bread
- 2 T. olive oil mayonnaise
- 2 oz. cucumber thinly sliced
- 2 slices thin provolone
- 1/2 roma tomato thinly sliced
- 1/8 avocado smashed
- 2 slices red onion
- 1/2 cup lettuce chopped
- salt & pepper to taste
Instructions
- Spread each slice of bread with a tablespoon of mayo.
- Layer veggies in order and top with salt & pepper to taste.
