The best part of this salad is its crunchiness! Romaine, apple, and cranberries all deliver the perfect bite. If raw cranberries are just too tart for you, try subbing half for dried. Dry cranberries pack lots of sugar, but they’ll help cut the rest of the tart ingredients.

Chicken Cranberry Apple Salad with Lemon Poppyseed Dressing
Ingredients
Chicken Cranberry Apple Salad
- 2 cups romaine lettuce shredded
- 3 oz. cooked chicken diced
- 1/2 green apple diced
- 1/4 cup fresh cranberries
Lemon Poppyseed Dressing
- 1 T. lemon juice
- 1 t. olive oil
- 1 t. honey
- 1 t. dijon mustard
- 1/4 t. poppy seeds
- pinch salt
Instructions
- Shake all dressing ingredients together in a small container.
- Layer romaine, chicken, green apple, and fresh cranberries in a large bowl.
- Drizzle dressing over salad and dig in!
