Ingredients

Chicken Cranberry Apple Salad

  • 2 cups romaine lettuce shredded
  • 3 oz. cooked chicken diced
  • 1/2 green apple diced
  • 1/4 cup fresh cranberries

Lemon Poppyseed Dressing

  • 1 T. lemon juice
  • 1 t. olive oil
  • 1 t. honey
  • 1 t. dijon mustard
  • 1/4 t. poppy seeds
  • pinch salt

Instructions

  • Shake all dressing ingredients together in a small container.
  • Layer romaine, chicken, green apple, and fresh cranberries in a large bowl.
  • Drizzle dressing over salad and dig in!
