Chicken Cranberry Apple Salad
- 2 cups romaine lettuce shredded
- 3 oz. cooked chicken diced
- 1/2 green apple diced
- 1/4 cup fresh cranberries
Lemon Poppyseed Dressing
- 1 T. lemon juice
- 1 t. olive oil
- 1 t. honey
- 1 t. dijon mustard
- 1/4 t. poppy seeds
- pinch salt
Shake all dressing ingredients together in a small container.
Layer romaine, chicken, green apple, and fresh cranberries in a large bowl.
Drizzle dressing over salad and dig in!
