These pakora-inspired fritters are stuffed with apples, celery, and onion, but the real star is fresh sage fried in browned butter. The herby, nutty, rich scent will fill your kitchen and make everyone drop what they’re doing to investigate.
I love adding a little spin on traditional favorites, so don’t be afraid to experiment! If you have leftover stuffing – highly recommend my traditional oyster stuffing, although I never manage to make enough for leftovers – try coating it in the cornmeal batter and frying it up. Add some curry for a more classic Indian flavor, or fry basil if sage just isn’t your thing.
Recipes are much more guidelines than rules, and I think the real fun happens when you just jump into uncharted waters.
I fried these fritters in my trusty cast iron skillet, although a dutch oven would work well too. You only need enough oil to come halfway up the sides of the fritters since you’ll flip them; don’t worry about completely submerging. Try to scoop out any runaway bits before they burn and flavor the oil.

Browned Sage Butter Apple Stuffing Fritters
Ingredients
- 6 T. butter
- 1/4 cup sage chopped
- 1 large apple diced
- 2 ribs celery diced
- 1 medium onion diced
- vegetable oil
Cornmeal Batter
- 1 cup flour
- 1/2 cup cornmeal
- 1/2 cup buttermilk
- 2 eggs
- 2 t. baking powder
- 1 t. baking soda
- 1 t. pepper
- 1 t. salt
Instructions
- Brown 4 T. butter in a large saucepan over medium-low heat. The butter is browned when light golden flakes appear and it has a nutty aroma.
- Add sage and fry for about 30 seconds, then add remaining 2 T. butter and stir to melt.
- Add apples, celery, and onions and cook over medium-low heat until soft, about 5-7 minutes.
- Heat 1/2-inch of oil in a large pot over high heat.
- Whisk together all ingredients for the batter. Fold in apple mixture.
- Drop heaping spoonfuls of the batter into the hot oil and fry until the bottom is golden brown, then flip and repeat.
- Remove with a slotted spoon and place on a baking rack set over a baking sheet. Serve immediately.
