Ingredients

  • 6 T. butter
  • 1/4 cup sage chopped
  • 1 large apple diced
  • 2 ribs celery diced
  • 1 medium onion diced
  • vegetable oil

Cornmeal Batter

  • 1 cup flour
  • 1/2 cup cornmeal
  • 1/2 cup buttermilk
  • 2 eggs
  • 2 t. baking powder
  • 1 t. baking soda
  • 1 t. pepper
  • 1 t. salt

Instructions

  • Brown 4 T. butter in a large saucepan over medium-low heat. The butter is browned when light golden flakes appear and it has a nutty aroma.
  • Add sage and fry for about 30 seconds, then add remaining 2 T. butter and stir to melt.
  • Add apples, celery, and onions and cook over medium-low heat until soft, about 5-7 minutes.
  • Heat 1/2-inch of oil in a large pot over high heat.
  • Whisk together all ingredients for the batter. Fold in apple mixture.
  • Drop heaping spoonfuls of the batter into the hot oil and fry until the bottom is golden brown, then flip and repeat.
  • Remove with a slotted spoon and place on a baking rack set over a baking sheet. Serve immediately.
