Browned Sage Butter Apple Stuffing Fritters

- 6 T. butter
- 1/4 cup sage chopped
- 1 large apple diced
- 2 ribs celery diced
- 1 medium onion diced
- vegetable oil
Cornmeal Batter
- 1 cup flour
- 1/2 cup cornmeal
- 1/2 cup buttermilk
- 2 eggs
- 2 t. baking powder
- 1 t. baking soda
- 1 t. pepper
- 1 t. salt
Brown 4 T. butter in a large saucepan over medium-low heat. The butter is browned when light golden flakes appear and it has a nutty aroma.
Add sage and fry for about 30 seconds, then add remaining 2 T. butter and stir to melt.
Add apples, celery, and onions and cook over medium-low heat until soft, about 5-7 minutes.
Heat 1/2-inch of oil in a large pot over high heat.
Whisk together all ingredients for the batter. Fold in apple mixture.
Drop heaping spoonfuls of the batter into the hot oil and fry until the bottom is golden brown, then flip and repeat.
Remove with a slotted spoon and place on a baking rack set over a baking sheet. Serve immediately.
