Ingredients

  • 2 Tbsp. flaxseed meal
  • 1/4 cup water
  • 2 cups flour
  • 1/2 cup brewer's yeast
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 cup butter
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 3 cups old-fashioned oats
  • 1 1/2 cups chocolate chips

Instructions

  • Mix together flaxseed meal and water. Set aside for 3-5 minutes.
  • Sift together flour, brewer's yeast, salt, cinnamon and baking soda.
  • In a large mixing bowl, cream together butter and sugars. Add eggs one at a time and mix well.
  • Stir flaxseed mixture and add with vanilla to the butter mix. Beat until blended.
  • Add dry ingredients to butter mixture. Stir in oats and chocolate chips.
  • Drop onto baking sheet with a medium cookie scoop (about 2 Tbsp. dough).
  • Chill in refrigerator for at least 1 hour or overnight.
  • When ready to bake, preheat the oven to 350°F. Bake for 10-12 minutes or until just barely golden brown.

Notes

Err on the side of underbaked rather than overbaked!
 

Freezing Instructions

Prepare dough and drop onto baking sheet. Freeze for at least an hour on the baking sheet, then transfer to a sealed freezer storage bag.
Bake cookies directly from frozen at 350°F for 11-14 minutes or until just barely golden brown.
