Lactation Cookies
Servings: 3 dozen
Ingredients
- 2 Tbsp. flaxseed meal
- 1/4 cup water
- 2 cups flour
- 1/2 cup brewer's yeast
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 1 tsp. baking soda
- 1 cup butter
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 2 eggs
- 1 tsp. vanilla
- 3 cups old-fashioned oats
- 1 1/2 cups chocolate chips
Instructions
- Mix together flaxseed meal and water. Set aside for 3-5 minutes.
- Sift together flour, brewer's yeast, salt, cinnamon and baking soda.
- In a large mixing bowl, cream together butter and sugars. Add eggs one at a time and mix well.
- Stir flaxseed mixture and add with vanilla to the butter mix. Beat until blended.
- Add dry ingredients to butter mixture. Stir in oats and chocolate chips.
- Using a large cookie scoop, drop ontobaking sheet.
- Chill in refrigerator for at least 1 hour or overnight.
- When ready to bake, preheat the oven to 350°F. Bake for 10-12 minutes or until just barely golden brown.
