Mix together flaxseed meal and water. Set aside for 3-5 minutes.
Sift together flour, brewer's yeast, salt, cinnamon and baking soda.
In a large mixing bowl, cream together butter and sugars. Add eggs one at a time and mix well.
Stir flaxseed mixture and add with vanilla to the butter mix. Beat until blended.
Add dry ingredients to butter mixture. Stir in oats and chocolate chips.
Drop onto baking sheet with a medium cookie scoop (about 2 Tbsp. dough).
Chill in refrigerator for at least 1 hour or overnight.
When ready to bake, preheat the oven to 350°F. Bake for 10-12 minutes or until just barely golden brown.
