Bonfire Burro Breakfast Casserole
Ingredients
- 32 oz. frozen diced hashbrowns
- 1 lb. breakfast sausage
- 7 eggs
- 2 cups mexican cheese blend shredded (divided)
- 8 oz. green chile sauce
- 1 cup roasted green chiles chopped
- 8 oz. sour cream
- 3.5 oz. chipotle in adobo minced
- 1 tsp. lime juice
- 2 jalapenos minced
- 2 Tbsp. cilantro chopped
Instructions
- Roast hashbrowns according to package directions.
- Preheat oven to 350°F.
- Brown the breakfast sausage.
- Scramble the eggs and fold in 1 cup shredded cheese.
- Layer hashbrowns, sausage, cheesy eggs, green chile sauce, remaining 1 cup shredded cheese, and green chiles in large dutch oven or deep dish.
- Bake uncovered at 350°F for 20 minutes.
- While casserole is baking, blend sour cream with chipotles in adobo and lime juice.
- Spread chipotle sour cream over casserole and sprinkle with jalapeno & cilantro.
