Bonfire Burro Breakfast Casserole

Ingredients

  • 32 oz. frozen diced hashbrowns
  • 1 lb. breakfast sausage
  • 7 eggs
  • 2 cups mexican cheese blend shredded (divided)
  • 8 oz. green chile sauce
  • 1 cup roasted green chiles chopped
  • 8 oz. sour cream
  • 3.5 oz. chipotle in adobo minced
  • 1 tsp. lime juice
  • 2 jalapenos minced
  • 2 Tbsp. cilantro chopped

Instructions

  • Roast hashbrowns according to package directions.
  • Preheat oven to 350°F.
  • Brown the breakfast sausage.
  • Scramble the eggs and fold in 1 cup shredded cheese.
  • Layer hashbrowns, sausage, cheesy eggs, green chile sauce, remaining 1 cup shredded cheese, and green chiles in large dutch oven or deep dish.
  • Bake uncovered at 350°F for 20 minutes.
  • While casserole is baking, blend sour cream with chipotles in adobo and lime juice.
  • Spread chipotle sour cream over casserole and sprinkle with jalapeno & cilantro.
