40 Clove Garlic Beef

Ingredients
- 2 Tbsp. vegetable oil
- 3 lb. shoulder roast boneless
- 1.5 Tbsp. salt
- 2 onions roughly chopped
- 40 cloves garlic peeled
- 4 cups garlic broth
Instructions
- Preheat oven to 325°F.Preheat dutch oven over high heat.
- While dutch oven is heating, pat roast dry with paper towels and season generously with salt on all sides.
- Add oil to dutch oven and sear the roast on all sides to a dark brown crust. Remove the roast.
- Sauté onions in rendered fat until translucent. Add garlic with a pinch of salt and sauté for another 5 minutes.
- Replace roast in the center of the onions, then pour broth around the outside. Bring broth to a simmer, then cover and move to the oven.
- Roast at 325°F for 2 hours, flip meat, and roast for another 2 hours.
- Gently pull roast into large chunks with two forks. Serve with mashed potatoes or another favorite starch.
