shoulder roast

Instructions
Preheat oven to 325°F.
Preheat dutch oven over high heat.
While dutch oven is heating, pat roast dry with paper towels and season generously with salt on all sides.
Add oil to dutch oven and sear the roast on all sides to a dark brown crust. Remove the roast.
Sauté onions in rendered fat until translucent. Add garlic with a pinch of salt and sauté for another 5 minutes.
Replace roast in the center of the onions, then pour broth around the outside. Bring broth to a simmer, then cover and move to the oven.
Roast at 325°F for 2 hours, flip meat, and roast for another 2 hours.
Gently pull roast into large chunks with two forks. Serve with mashed potatoes or another favorite starch.
