Sheet Pan Gnocchi
Servings: 8 bowls
Ingredients
- 1 lb. gnocchi
- 1 head broccoli chopped
- 1 pint cherry tomatoes
- 1 red bell pepper sliced
- 1/2 red onion sliced
- 3 cloves garlic minced
- 1/2 lb. smoked sausage sliced (optional)
- 1 tsp. italian seasoning
- 1/4 tsp. red pepper flakes more to taste
- 1/2 tsp. salt
- 2 Tbsp. olive oil
- 2 Tbsp. fresh basil chiffonnaded
- 2 Tbsp. shaved parmesan (optional)
Instructions
- Preheat oven to 450°F.
- Toss gnocchi, vegetables, sausage (if using), and spices in a large bowl. Drizzle with olive oil and toss to coat. Spread evenly across a baking sheet.
- Bake at 450°F for 35-40 minutes, until gnocchi is lightly browned & beginning to crisp.
- Sprinkle with fresh basil and shaved parmesan (if using) and serve.
