Sheet Pan Gnocchi

Ingredients

  • 1 lb. gnocchi
  • 1 head broccoli chopped
  • 1 pint cherry tomatoes
  • 1 red bell pepper sliced
  • 1/2 red onion sliced
  • 3 cloves garlic minced
  • 1/2 lb. smoked sausage sliced (optional)
  • 1 tsp. italian seasoning
  • 1/4 tsp. red pepper flakes more to taste
  • 1/2 tsp. salt
  • 2 Tbsp. olive oil
  • 2 Tbsp. fresh basil chiffonnaded
  • 2 Tbsp. shaved parmesan (optional)

Instructions

  • Preheat oven to 450°F.
  • Toss gnocchi, vegetables, sausage (if using), and spices in a large bowl. Drizzle with olive oil and toss to coat. Spread evenly across a baking sheet.
  • Bake at 450°F for 35-40 minutes, until gnocchi is lightly browned & beginning to crisp.
  • Sprinkle with fresh basil and shaved parmesan (if using) and serve.
  • (Almost) full english breakfast for two, all baked together on a sheet pan in 15 minutes! Perfect weekend brunch or mid-week surprise for a wonderful morning treat.
