Ingredients

  • 2 cups orzo
  • 10 oz. cherry tomatoes halved
  • 1 cucumber thinly sliced
  • 1/2 red onion thinly sliced
  • 1/2 cup kalamata olives pitted & sliced
  • 6 oz. feta crumbled
  • 1 T. fresh dill minced
  • 1 1/2 cups tzatziki sauce

Instructions

  • Cook orzo al dente, according to package directions. Drain and rinse with cold water.
  • Combine orzo with tomatoes, cucumber, red onion, olives, feta, and dill. Toss with tzatziki sauce.
  • Serve cold or at room temp.

Notes

Quick Tzatziki Tip: pulse all the ingredients in a blender until roughly chopped, instead of dicing by hand.
