Freezer Breakfast Burritos
Servings: 12 burritos
Ingredients
- 1 lb. frozen shredded hashbrowns
- 16 eggs
- 12 uncooked tortillas
- 10 oz. green chile sauce
- 10 oz. mexican blend cheese shredded
- 1/8 bushel fresh hatch green chiles roasted & sliced
Chipotle Crema
- 1/3 cup sour cream
- 1.5 oz. chipotle in adobo
- 1 tsp. lime juice
Bacon OR Sausage OR Veggies
- 1.5 lb. thick-sliced bacon
- 1 lb. breakfast sausage
- 1/2 lb. mushrooms sliced
- 15 oz. black beans drained & rinsed
Instructions
- Prepare bacon OR sausage OR mushrooms.
- Roast hashbrowns according to package directions.
- Scramble eggs al dente.
- Blend chipotle crema until smooth.
- Lay out all tortillas and top with: green chile sauce hashbrowns ½ cheese hatch chiles bacon OR sausage OR mushrooms & beans chipotle crema ½ cheese scrambled eggs
- Roll burritos.
- Wrap in foil, label, and freeze.
