Friendsgiving: Bourbon Pumpkin Pie

Time for our grand Friendsgiving party finale… pumpkin pie! With a boozy touch, of course, because sometimes I just can’t help myself. Holidays are meant for celebrating and celebrations call for a little bourbon, right? We’ll make a half batch of perfectly flaky pie crust, fill it up with bourbon-y pumpkin, and top the whole thing with bourbon maple whipped cream just because we can.

This week is all about Friendsgiving, the perfect way to start your end-of-year holiday partying! No stress, no drama, no gifts, just getting together with friends to enjoy lots of good food & wine. I’m sharing a Friendsgiving recipe every day – everything from the bird to the pie – and then on Friday I’ll have the complete party guide for you, including your grocery list & stress-free cooking instructions. Mid-November is the perfect time to have everyone over, partly to celebrate the holidays with friends, partly because you get two Thanksgiving dinners!

How do you prefer your pumpkin pie? For me, it’s cold and creamy all the way, and I’m also the person who heaps on a full layer of whipped cream.

We’re finishing our pie with bourbon maple whipped cream for pure holiday bliss. It’s barely sweetened to let the bourbon really shine. If you’re not a big fan of bourbon you might want to add another tablespoon of maple syrup, or just omit the bourbon altogether.

Some years I go traditional for Thanksgiving and some years I don’t, so this feels like a nice little twist on the classic. Whatever your style, at least one pie is a Friendsgiving necessity. Bourbon Pumpkin Pie

Boozy pumpkin pie, our Friendsgiving finale! Perfectly flaky pie crust filled with pumpkin & topped with bourbon maple whipped cream, just because we can.

Ingredients

  • 1/2 recipe Perfectly Flaky Pie Crust
  • 3/4 cup sugar
  • 1 t. cinnamon
  • 1 t. ginger
  • 1/2 t. nutmeg
  • 1/2 t. salt
  • 8 oz. cream cheese softened
  • 15 oz. pure pumpkin
  • 2 T. bourbon
  • 4 T. butter melted
  • 3 eggs

Bourbon Maple Whipped Cream

  • 3/4 cup heavy cream
  • 2 T. bourbon
  • 2 T. maple syrup
  • 1 t. vanilla
  • 1/8 t. salt

Instructions

  • Prepare a half recipe of Perfectly Flaky Pie Crust.
  • Preheat oven to 425° with a rimmed baking sheet on the middle rack.
  • Roll cold dough into a disk and transfer to pie dish. Cut off overhanging dough, crimp edges, and brush with egg white. Line pie crust with foil and fill with with pie weights or dry beans.
  • Bake at 425° on the preheated baking sheet for 15 minutes. Remove foil & weights and bake for another 10 minutes. When done, reduce oven to 350°.
  • While pie crust is baking, whisk together sugar, spices, and salt.
  • Cream in cream cheese, pumpkin, bourbon, and butter. Add eggs one at a time and mix until completely smooth.
  • Pour filling into the baked pie crust and tap the dish on the counter several times to release air bubbles. Cover the edges of the pie crust with foil to prevent burning.
  • Bake at 375° on the preheated baking sheet for 35-40 minutes, until the center barely jiggles when tapped.
  • Let pie cool for at least 1 hour before slicing. Serve with bourbon maple whipped cream.

Bourbon Maple Whipped Cream

  • Whip all ingredients together with a stand mixer or handheld mixer on medium-high speed until thick, about 5 minutes.
