Ingredients

  • 2 golden delicious apples peeled & diced
  • 1 T. olive oil
  • 2 lb. potatoes diced
  • 4 oz. fat-free cream cheese
  • 1/2 cup blue cheese crumbled
  • 2 T. butter
  • 1 1/2 T. chives chopped
  • salt & pepper to taste

Instructions

  • Preheat oven to 350°.
  • Place apple pieces on a large piece of foil and drizzle with olive oil.
  • Wrap tin foil tightly and roast at 350° for 20 minutes.
  • Boil potatoes until tender and drain.
  • Mash potatoes with roasted apples.
  • Stir in cream cheese, blue cheese, butter, and 1 T. chives.
  • Bake at 350° for 10-15 minutes until golden brown & bubbling.
  • Top with remaining chives.
