Ingredients

  • 2 thick slices rye bread
  • 7 oz. sauerkraut drained & pressed dry
  • ¼ cup fat-free thousand island dressing
  • 6 oz. corned beef
  • 2 slices swiss cheese

Instructions

  • Preheat oven broiler.
  • Toast the rye bread on the middle rack while the oven is heating – check frequently and remove when golden brown.
  • While the bread is toasting, stir together the sauerkraut and thousand island.
  • Remove the toasted bread from the oven and set on a baking sheet. Pile the corned beef evenly on each slice and top with the sauerkraut mixture.
  • Broil for 3-4 minutes until warmed through. Place cheese slices on top and broil for another minute until cheese is bubbling.
  • Serve hot straight from the oven.
