Kinda-gross, kinda-cute party appetizer couldn't be easier: mozzarella balls stuffed into meatballs, topped with olive 'eyes', & dished up on marinara.

Ingredients
Meatball Mixture
1lb.ground beef
1/4cupfresh parsleyminced
1/4cupparmesangrated
1smallonionfinely diced
2clovesgarlicminced
1egg
1/2t.salt
1/2t.pepper
Monster Eyeballs
12oz.fresh ciliegine mozzarella
2cupsmarinara sauce
1/2cuppimento stuffed green olivessliced
Instructions
Preheat oven to 425°.
Mix together all ingredients for meatballs.
Roll meatball mixture into balls, about 1 T. each, and set on a foil-lined baking sheet. in the palm of your hand, then place a mozzarella ball in the middle and mold the meatball around it.
Push a mozzarella ball deep into each meatball, pressing the edges around the mozzarella.
Bake at 425° for 8-10 minutes, until meatballs are cooked and mozzarella is beginning to melt.
While meatballs are baking, spread marinara evenly in a large baking dish and add to the oven to heat.
As soon as the meatballs come out of the oven, press an olive slice on top of each mozzarella ball.
Set meatballs into the hot marinara sauce and serve warm.

You can make this a simple 4-ingredient recipe by substituting sausage for the meatball mixture.
