Ingredients

  • 1 1/2 cups jasmine rice
  • 15 oz. light coconut milk
  • 1 cup water
  • 1 clove garlic minced
  • 2 t. lime juice
  • 1 t. salt

Instructions

  • Combine all ingredients in a medium pot.
  • Bring to a boil, the reduce to a simmer. Cover and cook for 20 minutes.
  • Remove from heat and let rest, covered, 5 minutes.
  • Fluff with a fork and serve immediately.
