Ingredients

  • 1/3 cup cocoa powder
  • 1 ½ t. instant espresso
  • ½ cup + 2 T. boiling water
  • 2 oz. unsweetened chocolate
  • ½ cup + 2 T. vegetable oil
  • 4 T. butter melted
  • 3 eggs
  • 2 egg yolks
  • 2 t. vanilla
  • 1 ½ cups sugar
  • 1 cup brown sugar
  • 1 t. salt
  • 2 1/2 cups flour
  • almond bark or glaze melted (optional)
  • sprinkles, nuts, powdered sugar, etc. (optional)

Instructions

  • Preheat your waffle iron.
  • Whisk together cocoa powder, instant espresso, and boiling water. Add unsweetened chocolate and continue whisking until melted.
  • Incorporate butter and oil, then whisk in eggs, egg yolks, and vanilla until smooth.
  • Whisk in both sugars and salt. When fully incorporated, add flour and mix just until combined.
  • Spray the waffle iron with nonstick spray and drop a spoonful of batter into each quadrant.
  • Close and let bake until the regular ‘done’ signal. Waffles will seem too soft when you take them out - they crisp up as soon as they cool off.
  • Let the brownie waffles cool on a wire rack.
  • Optionally drizzle with melted chocolate or glaze and top with sprinkles, chopped nuts, powdered sugar, or any of your other favorites – this is a great, easy way to add extra flavor & festive colors!

Notes

These can be a little trickier to remove from the iron than breakfast waffles. Spray liberally and use chopsticks to help loosen the cakes.
