Ingredients

Filling

  • 1/2 lb. ground breakfast sausage cooked & crumbled
  • 12 oz. cottage cheese
  • 1 cup cheddar cheese shredded
  • 3 oz. cream cheese softened
  • 2 eggs

Biscuit Crust

  • 1 cup flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 Tbsp. shortening or butter cold
  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup green onions chopped
  • 2 Tbsp. sesame seeds

Instructions

  • Preheat oven to 375°.
  • Mix together all filling ingredients and set aside.
  • Whisk flour, baking powder, and salt. Cut in butter until it is a sandy texture.
  • Fold in eggs, milk, and green onions until barely combined.
  • Spread half the batter across the bottom of a greased pie plate and spoon filling over it evenly. Spread remaining batter across the top and sprinkle with sesame seeds.
  • Bake at 375° for 35-45 minutes until crust is golden brown and a knife comes out cleanly. Let cool at least 5 minutes before serving.

Notes

The filling can be prepped ahead of time and held in the fridge for quick last-minute assembly.
 

Freezing Instructions

Prepare as usual, then par-bake at 375° for 25-30 minutes until crust is barely lightly golden brown. Let cool, then cover tightly (recommend plastic wrap + foil) and freeze.
Reheat frozen pie by thawing in the fridge overnight, then bake at 375° for another 25-30 minutes until crust is deeply golden brown and a knife comes out cleanly. Let cool at least 5 minutes before serving.
