Ingredients

  • 1 1/2 lb. chicken thighs diced
  • 2 sweet potatoes diced
  • 2 onions halved & thinly sliced
  • 1 lb. mushrooms sliced
  • 1 cup thai basil thinly sliced
  • 4 cloves garlic minced
  • 2 T. fresh ginger grated
  • 2 T. green curry paste
  • 1 T. curry powder
  • 1 t. garam masala
  • 1/2 t. salt
  • 15 oz. coconut milk
  • 1 cup chicken broth

Instructions

  • Combine all ingredients in a slow cooker.
  • Cook for 4 hours on high or 8 hours on low.
  • Serve hot with jasmine rice, naan, or cauliflower rice.
