- 1 1/2 lb. chicken thighs diced
- 2 sweet potatoes diced
- 2 onions halved & thinly sliced
- 1 lb. mushrooms sliced
- 1 cup thai basil thinly sliced
- 4 cloves garlic minced
- 2 T. fresh ginger grated
- 2 T. green curry paste
- 1 T. curry powder
- 1 t. garam masala
- 1/2 t. salt
- 15 oz. coconut milk
- 1 cup chicken broth
Combine all ingredients in a slow cooker.
Cook for 4 hours on high or 8 hours on low.
Serve hot with jasmine rice, naan, or cauliflower rice.
