Ingredients

  • 1 lb. ground turkey
  • 8 oz. water chestnuts drained & minced
  • 3 carrots peeled & grated
  • 4 oz. mushrooms chopped
  • 1/2 onion finely diced
  • 1/2 cup cilantro minced
  • 1 t. ginger grated
  • 1 egg
  • 1 T. soy sauce
  • 1 T. sambal oelek or chili garlic paste
  • 1/4 cup breadcrumbs

Instructions

  • Preheat oven to 350°.
  • Combine all ingredients in a large bowl. Mixture will be wet and sticky.
  • Roll into 1” meatballs and place on a lined baking sheet.
  • Bake at 350° for 15-20 minutes until baked through and golden brown.

Notes

You can make a basic dipping sauce with any combination of Asian condiments in your fridge. My favorite is sesame ginger marinade, soy sauce, chili garlic paste, and lime juice.
These freeze well and can be reheated in either the microwave or oven.
