Ingredients
  

Meatball Mixture

  • 1 lb. ground beef
  • 1/4 cup fresh parsley minced
  • 1/4 cup parmesan grated
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 egg
  • 1/2 t. salt
  • 1/2 t. pepper

Monster Eyeballs

  • 12 oz. fresh ciliegine mozzarella
  • 2 cups marinara sauce
  • 1/2 cup pimento stuffed green olives sliced

Instructions
 

  • Preheat oven to 425°.
  • Mix together all ingredients for meatballs.
  • Roll meatball mixture into balls, about 1 T. each, and set on a foil-lined baking sheet.
     in the palm of your hand, then place a mozzarella ball in the middle and mold the meatball around it.
  • Push a mozzarella ball deep into each meatball, pressing the edges around the mozzarella.
  • Bake at 425° for 8-10 minutes, until meatballs are cooked and mozzarella is beginning to melt.
  • While meatballs are baking, spread marinara evenly in a large baking dish and add to the oven to heat.
  • As soon as the meatballs come out of the oven, press an olive slice on top of each mozzarella ball.
  • Set meatballs into the hot marinara sauce and serve warm.

Notes

You can make this a simple 4-ingredient recipe by substituting sausage for the meatball mixture.
