Blue Cheese & Roasted Apple Mashed Potatoes
Blue Cheese & Roasted Apple Mashed Potatoes are a sweet, salty, and simple way to dress up everyone’s favorite side dish.
- 2 golden delicious apples peeled & diced
- 1 T. olive oil
- 2 lb. potatoes diced
- 4 oz. fat-free cream cheese
- 1/2 cup blue cheese crumbled
- 2 T. butter
- 1 1/2 T. chives chopped
- salt & pepper to taste
Preheat oven to 350°.
Place apple pieces on a large piece of foil and drizzle with olive oil.
Wrap tin foil tightly and roast at 350° for 20 minutes.
Boil potatoes until tender and drain.
Mash potatoes with roasted apples.
Stir in cream cheese, blue cheese, butter, and 1 T. chives.
Bake at 350° for 10-15 minutes until golden brown & bubbling.
Top with remaining chives.
