Sun-Dried Tomato Cream Sauce
Creamy sauce built around sun-dried tomatoes – or just a simple paste! – is perfect for smothering fish or chicken.
- ¼ cup sun-dried tomatoes minced, or paste (below)
- 2 T. butter
- 2 cloves garlic minced
- 1 cup chicken or vegetable broth
- salt to taste
- 1/3 cup plain greek yogurt
Heat sun-dried tomatoes or paste over medium heat in a large skillet.
Add butter and garlic. Stir until butter has melted and garlic is soft.
Pour in chicken broth and stir until fully combined. Add salt to taste.
Remove the skillet from heat. Fold in greek yogurt until the sauce is a creamy rose color.
Serve over fish or chicken.
