Okay, okay, I know. Major fail as a cravable, want-it-in-my-mouth-now recipe for a food blog. What the heck is this greenish stuff, and is there even more purple stuff hiding in there?

I get it. This is not why you’re here. You’re here for pork green chile and crazy-good overnight rye bread and mini cannoli cups, which you absolutely should be because those are all AH-MAZING. Let’s not pretend I’d rather not be eating all three of those right now instead.
But this is also real life, and right now my real life is all about balancing out the past few days… weeks… months of winter eating. I’m ready for some fresh fruits & veggies and feel-good smoothies. I’m ready to feel awesome climbing mountains and getting married in eight (!!!) weeks!
Fruit smoothies are so good from all those natural sugars, but too much at once spirals me into a mid-morning crash. I’m also not much for sweet breakfasts… give me eggs & bacon over a cinnamon roll any morning.
And while I’m not going to pretend this is just like a milkshake, it’s a really great feeling to start your day off with ALL your servings of vegetables in one cup! We’re keeping all the good nutrients from the skin and pulp in there too. Guaranteed, this will keep you full waaaaay longer than a little 100-calorie yogurt.
This makes a very thick, dense smoothie. If you want to thin it out you’ve got options! Add apple juice to sweeten it up, spicy tomato juice for a kick, or plain old water.
100-Calorie Veggie Smoothie
Ingredients
- 1 tomato
- ½ cucumber roughly chopped
- ½ zucchini roughly chopped
- 1 cup spinach
- 1 cup red cabbage
- 1 carrot roughly chopped
- 1 poblano or bell pepper
Instructions
- Start by pulsing the tomato in a food processor or blender to create a liquid base.
- Slowly add the remaining ingredients in order, pulsing until completely smooth.
- Pour into a large cup and serve! Add ice for a cold beverage.
